Our Story
Dough, science and a little alchemy.
The art and science of dough making
Pizza Lab isn't just a pizza place. It's a laboratory of respect. Our team brings a combined 100 years of pizza making to every pie.

Laboratory philosophy
Pizza Lab was born out of a relentless obsession with getting pizza right. While others focus on speed, we treat the kitchen like a laboratory dedicated to dough. A truly exceptional pizza starts at the molecular level, which is why we source everything carefully, right down to imported mineral water from its natural source. Pure, all-natural ingredients make every bite light, easy to digest and full of flavor. Welcome to the lab, where baking passion meets culinary science.
Where we come from
We grew up in the Northeast, in Boston, New York and New Haven, where generations of pizza tradition taught us what great pizza really tastes like. Over time we watched the pizzerias we loved cut corners: preservatives here, shortcuts there, ingredients nobody could pronounce. So we asked a simple question. What if we kept everything we loved about Northeast pizza and our Italian roots, and rebuilt it around real, honest ingredients? Not diet pizza. Just clean food that tastes extraordinary.

The art of fermentation
Our dough is a study in patience. It preferments for at least 48 hours, then ferments for 72 more before it meets our Italian oven. Every recipe is tested until the crunch, texture and flavor find their balance. Whether you order a classic Neapolitan staple or something new from the lab, you're tasting a long Italian baking tradition, made for today.
The process
Preferment
At least 48 hours to build flavor before the final dough is mixed.
Ferment
72 more hours of slow fermentation for a light, digestible crust.
Bake
Our Italian oven puffs the crust and gives it that char.
Serve
Straight from the oven to your table, or into the box.
